The product range Herbarom contains all colouring and flavouring sweet fruit extracts. Herbarom is made from juice extracted and dried apple components. To guarantee a constant quality the careful selection of the raw material begins already during cultivation.

The apple specific sugars will be extracted from the apple cells by hot water extraction, the insoluble components will be separated.
The extract contains, next to the apple specific sugars, also glucose, fructose and Sorbitol, the colour and flavour components of the apple as well as the secondary, brown coloured reaction products resulting during processing.

 

 

Herbarom AF 01 contains as concentrate the ingredients extracted from the apple, mostly the pleasantly fruity-sweet smell and flavour components as well as the apple specific types of sugar, here mostly the mono-saccharides fructose, glucose and Sorbitol. In comparison to caramelised sugar Herbarom AF 01 contains less reaction products of the reducing sugars with primary and secondary amines (Maillard products) as colouring and flavouring components. On the contrary contains the reaction products of the peroxidase and polyphenol oxidase catalized conversion (oligophenols and polyphenols) and hardly any sucrose. Herbarom is also less sweet than caramelized sugars.

 

Due to its specific characteristics Herbarom AF 01 is suitable for fine tuning of colour and flavour in various beverages next to its colour supporting characteristics and improved shelf life for baked products (non-perishable baked products, bread, gingerbread, etc.). Further applications of Herbarom AF 01 are fruit preparations, confectionery and liquorice.
