As we all know Liquid Shio Koji is the miracle ingredient that serves a thousand functions! We all know it is simply fermented rice, and we all know that it only has to be labelled as RICE AND SALT!
We have proven that our Liquid Shio Koji has a unique function in that it improves the moisture retention in rice and helps reduce drying and hardening of the rice after both cooking and refrigeration.
As we all know, rice begins to dry out as soon as it is cooked and after 3-4 hours it has lost around 10% of the moisture from fresh. We can change that!
