Koji powder is a natural ingredient from fermented rice. We simply take Rice, water and KOJI (the fermentor, Aspergillus oryzae) and let nature take its course to create a SHIO KOJI paste, this paste is then naturally air dried and we have our unique KOJI POWDER

SHIO KOJI is well known for offering the most impactive UMAMI on the market, our LIQUID SHIO KOJI is the cleanest label UMAMI bomb on the market and well respected.
We have now taken that one step further and as well as the UMAMI associated with SHIO KOJI and LIQUID SHIO KOJI we are now able to offer another taste sensation also offering KOKUMI with our KOJI POWDER.
The main KOKUMI component to our KOJI POWDER is MELANOIDIN, this is a high molecular weight heterogeneous polymer which is formed during the drying process where the sugars and amino acids of the natural SHIO KOJI collide during!

KOKUMI is the latest taste sensation. Although KOKUMI doesn't have a taste within itself it does add a deeper richer aromatic more complex longer lasting flavour profile to the products it is used in.
