Ice cream - reduced fat
We have been experimenting with creating reduced fat ice creams without being detrimental to the flavour & texture of the finished product.
By using our Herbafood AQ Plus Citrus we are able to reduce the fat content by a minimum of 30%, without reducing the mouthfeel texture
We created a number of flavours through our kitchen trials from Chocolate, coffee and basil. During our internal blind taste panels the results showed there was very minimal difference between our reduced fat versions and the control
The addition of AQ Plus Citrus Fibre we also achieve an improved melting properties which enables a longer standing ice cream.
